Pumpkin Protein Muffins

1c pumpkin puree

1/4c melted coconut oil

1/4 c oat milk

1 tsp vanilla

2 eggs

1 c oat flour

1/3 c Arbonne vanilla protein powder

1/2 c coconut sugar (or brown sugar)

2 tsp pumpkin spice blend

1 tsp baking powder

1/2 tsp baking soda

pinch salt

1/2 c chocolate chips

Preheat oven to 350 deg, and line a muffin tin with silicon or paper muffin liners.

In a medium bowl, mix pumpkin, sugar, oil, vanilla, eggs. Add in the protein powder, flour, baking powder/ soda, salt, and spice. Stir until almost combined, then add in oat milk (might need a splash more if mixture is too thick/ dry). Then add in choc chips and stir until combined. Portion into muffin tin and bake for 25 mins.
