Apple Crumble

Gluten and Dairy Free apple crumble

The other day our neighbors dropped off a bunch of beautiful apples from their mom’s apple tree, and I immediately knew I had to make an apple crisp. You could also mix in some blackberries, or any other seasonal fruits that speak to you for this recipe!

8 apples, skin taken off, and chopped into bite size pieces (or enough fruit- apples, berries, a mix, to take up 2/3 of the depth of your casserole dish)

1 1/2 c gluten free oats

1/2 c gluten free flour blend (I like to use white and brown rice flours with a little tapioca starch, or a premade gf mix)

1/2 c brown sugar

1 tbsp cinnamon

pinch salt

1/3 c coconut oil (you could use butter if not dairy free!)

Preheat oven to 350 deg. Chop and prep your apples or fruit of choice and place into your casserole type dish- I tend to you a 3 inch tall and 6-8 inch in diameter circular dish.

Mix all the remaining ingredients together in a medium size bowl. You can cut your butter, or scoop your coconut oil in and use a spoon to crumble and mix it in, or I like to just use my hands and smush the coconut oil into the dry ingredients and mix it all together until its a crumbly, yet can stick together type consistency. Pour your crumble topping over your fruit and give it a gentle pat down. Place in the over for 30-35 mins, or until your fruit is tender and cooked down and your crumble topping is fragrant and golden around the edges. Let cool slightly and enjoy, or elevate it with a scoop of ice cream- YUM!
