Simple Tomato Sauce

Simple, fresh pasta sauce!

I love gardening and had some great success this year, which has been exciting. And I was lucky enough to get LOADS of cherry tomatoes, as well as swiss chard which is perfect for a nice light pasta sauce!

2-3 cups of cherry tomatoes

4-6 stalks of swiss-chard

1 tbsp olive oil

1 garlic clove, minced

salt and pepper to taste

Start by slicing your cherry tomatoes in half. Then slice the swiss-chard into bite size pieces. Pour your olive oil into a pan and heat on medium- high heat, add in the miced garlic and cook until fragrant. Add your tomatoes and chard, and sauté until the tomatoes are soft and juicy, and the swiss-chard is wilted and tender (it will decrease in volume immensely). Add in your salt and pepper to taste, and that’s it!

I like to serve this over a gluten free spagetti or penne noodle, with turkey meatballs as a protein. You could easily swap out for any other protein, or keep it with just veggies, add some beans- get creative and versatile! I suggest pre-cooking the pasta noodles and protein, and then tossing it all together in the light “sauce” and heating it all that way before serving. Top with fresh parmesean if desired, or some nutritional yeast if dairy free!
