GF/ DF Waffles
Waffles were a special treat in my house, and something I remember fondly having at my grandparents house over the holidays. We recently bought a waffle iron and have not looked back! And I was able to convert my family waffle recipe to be a GF/ DF version- so here it is!
1 c gluten free flour mix (I have been making my own, but any mix from the store should work well here- or try just regular flour if you are not gf)
1/2 c tapioca starch (could try corn starch too- I haven’t tried this myself, but likely would be fine)
2 tbsp cane sugar
3 tsp baking powder
1/2 tsp salt
1 c oat milk (or other alternative milk)
2 eggs
1/4 c light olive oil
Put all the ingredients in one bowl and whisk until there are no lumps. Preheat your waffle iron, and butter or grease it as needed. Pour in 1/2 c of batter (or however much your waffle iron advises) and cook until no more steam comes out, and the waffle is cooked- crisp on the outside! Enjoy with fresh fruit, yogurt, syrup, or even a side of bacon!
