Veggie Medley Salad
This I adopted from my early teenage years when I worked at the Deli in Thrifty Foods. There was a salad in the case that was made of various chopped veggies with an Italian dressing on it- it was a great way to offer something different and use up leftover veggies from the millions of trays we would make. And with so many summer family birthdays in our house, I have found myself with leftover veggies trays many times!
Take your leftover veggies from the tray or even a few from your fridge (carrots, broccoli, peas, peppers, cucumber, cauliflower- WHATEVER) and chop it all so its bite sized. Toss into a bowl and sprinkle with salt and pepper.
Make a dressing- here you could use a favourite Italian store bought one, but I like to whip up a honey Dijon style vinaigrette:
1tbsp honey
2tbsp apple cider vinegar
1tbsp Dijon
2tbsp olive oil
1tsp mixed Italian herbs
whisk together and pour over your veggies.
You could then serve the salad as is, or recently I have been loving piling it on a bed of mixed greens, spinach, or even mixing in some quinoa and chickpeas to make it an easy grab and go lunch!
