Easy Egg Bites

 This is a great way to meal prep a breakfast, or protein for lunches for a few days. I enjoy two in the mornings for protein packed start to my day and often eat them with avocado or a piece of toast, or rice cakes, whatever I fancy depending how hungry I am. Prepping breakfast can set you up for a successful day and help avert unhelpful cravings!

6 eggs

2 tbsp oat milk (or almond or whatever you have on hand)

1 tsp seasoning salt (or 3/4 tsp salt and 1/4 tsp paprika)

1/2 tsp garlic powder

1/2 tsp dill

Bacon bits, grated cheese, parmesan, green onions, or any other topper (optional)

Preheat your oven to 350 deg. Line a muffin tin with 6 silicon liners, or oil your tin well. Crack your eggs into a medium sized bowl, add your milk and seasonings and whisk vigorously until well combined and the eggs start to create little bubbles on the top. Pour out into the six muffin cups, top with whatever you choose (I chose Epicures “better than bacon” vegan bacon bits- they are actually very tasty! And bake in the oven for 25 mins, or until the middle part if the egg is set and cooked.
