Hearty Gnocchi Soup

Last week I made the most delicious soup that had a sneaky and very tasty addition: Gnocchi. Gnocchi is basically a potato dumpling pasta and it is heavenly, if you haven’t had it before, I highly recommend but also recommend this soup!

2 celery stalks, diced

2 carrots, diced

1/2 white onion, diced

2 garlic cloves, minced

1/2 c frozen peas (optional, but I love peas in soup)

2 chicken breasts, cubed (you can add this in cooked or raw)

5-6 cups of chicken broth

1 can of coconut milk, full fat

I package of gnocchi (we found a gluten free one that was perfect)

1 tbsp dried, mixed herbs (like an Italian herb blend)

salt and pepper to taste

Start by drizzling a big pot with avocado oil, and place on medium/ high heat. Add in your veggies (just not the frozen peas) including garlic, and sauté for a couple minutes until fragrant. Then add in your cubed chicken, if it is raw I would cook it until it is mostly done, and add your salt/ pepper/ and herbs. Continue to sauté everything until combined. Then add in your chicken broth, stir until combined and bring to a gentle bubble. Toss in your gnocchi, frozen peas, and coconut milk and let the gnocchi cook in the soup absorbing all the tasty flavors. Gnocchi cooks fast so this shouldn’t take more than 7 minutes. Once your gnocchi is tender and cooked, you are done! I enjoyed it as is, but my boys loved topping it withe a little shredded cheese- it was so good and hearty in this cold weather.
