Sheet Pan Sausage Bake

The other day I made the most delicious Sheet Pan Dinner. I love this as it is low prep, easy cooking, generally one pan (unless you serve with rice too) and so simple. You preheat your oven to 400 deg, chop all your veg, top with oil and spices, add your protein and toss in the oven for 25 mins or until your veg and protein are cooked. This is what I used for mine, but you can literally use whatever is on hand:

6 mild italian sausages

1 yam (quartered)

1 sweet potato (quartered)

3 potatoes (quartered)

2 handfuls brussels sprouts (sliced)

1/2 white onion (sliced thick)

6 whole garlic cloves

4 carrots (cut length ways, then in half)

2 tbsp olive oil

2-3 tbsp balsamic vinegar

salt and pepper to taste

2 tbsp of garlic herb seasoning (or any herbs/ favourite seasoning you have on hand, I just happen to love this one from Epicure)

I try to keep my veg relatively the same size, and things like the potatoes (that take longer to cook) a little smaller in size than the carrots (which take less time to cook) so it all evens out. Throw all your chopped veg on a parchment lined sheet pan, drizzle with oil, balsamic and spices, add your protein on top and throw in the oven! We ate it as is, but you could serve it with rice or quinoa too.
